
Grapes: Carignan, Syrah
Harvest: Syrah: first decade of september. Carignan: second de- cade of september.
Vinification: 10-day maceration on the skins. 50% of the wine con- tinues its maturation in 3 and 4 year-old barriques, the remainder in steel for several months. A minimum of 2 month’s bottle-ageing follows.
Appearance: deep ruby red.
Bouquet: rich, emphatic fragrances of ripe wild berry fruit.
Palate: impressions of red berry fruit continue on the palate, which boasts a firm structure and notable balance among its components. The finish is very long-linge- ring.
Alcohol: 13 - 13,5%
Serving suggestions: a wide range of charcuterie, eel stews, fat-rich fish, and meat-based first courses.
Serving temperature: 16°- 17°c
