
Growing area: Sulcis, on the south-western tip of Sardinia.
Climate: mediterranean climate, with low rainfall distributed spora- dically throughout the year, but concentrated almost enti- rely in autumn and winter. Frequent north-westerly winds, high temperatures in spring and summer, mild in autumn, variable from dry and cold to mild in winter.
Soils: the soils are naturally sandy and clay-chalky, sub-alkaline, of a rocky, schistous character and medium textured, with moderate nutrient levels. Satisfactory levels of minerals add distinctive character.
Training system: bush-trained, on own roots.
Vineyard yield: 70 q/ha
Appearance: deep ruby red with cherry highlights.
Bouquet: good intensity, medium breadth; a complex amalgam of cri- sp, balsamic notes of red berry fruit and blossoms, toge- ther with more complex hints of spices and new oak.
Palate: rich, full, satisfying. The first sip reveals the excellent balan- ce, with an appealingly silky texture, a touch of crispness, and supple tannins that provide a distinctive smoothness on the mid-palate. A long-lingering finish offers new sen- sations.
Serving suggestions: first courses of game, wild boar stew, mature cheeses.
Serving temperature: 16° - 18°c
Harvest: between late september and early october.
Vinification: the wines macerates on the skins at 26 - 28°c for at least 10 - 12 days. Upon completion of malolactic, it spends a minimum of 10 months in once -and twice- used barriques, followed by an additional minimum of 4 months in the bottle.
Alcohol: 14 - 14,5%
