
Grapes: Carignan
Growing area: sulcis, on the south-western tip of sardinia.
Climate: mediterranean climate, with low rainfall distributed spora- dically throughout the year, but concentrated almost enti- rely in autumn and winter. Frequent north-westerly winds, high temperatures in spring and summer, mild in autumn, variable from dry and cold to mild in winter.
Soils: the soils are naturally sandy and clay-chalky, sub-alkaline, of a rocky, schistous character and medium textured, with moderate nutrient levels. Satisfactory levels of minerals add distinctive character.
Training method: espalier, pruned to the spurred cordon system.
Vineyard yield: 80 - 90 q/ha
Appearance: a striking, garnet-flecked ruby of great depth.
Bouquet: great aromatic breadth and length. Smoky notes give the wine unusual and original character, with hints of red fruit and very ripe plums. Herbal aromas of geraniums in full-bloom and black pepper at finish.
Palate: initially decisive and vibrant. Glycerine and tannins are ba- lanced giving a pleasant roundness to the wine. The finish preserves all these sensations.
Serving suggestion: pasta dishes with game, grilled tuna, grilled red meat, fresh sardinian fiore pecorino cheese.
Serving temperature: 16°c - 17°c
Harvest: from the second to the third decade of september.
Vinification: the wines macerates at 24 - 26°c for 8 days on the skins. Af- ter completion of malolactic, it matures 6 months in lined cement vats and at least 3 months in the bottle.
Alcohol: 13.5 - 14,0%
